The process is based on indirect heat exchange, where the material contacts a multi-tubular shaft heated by saturated steam flowing within. This ensures uniform heat transfer and consistent cooking results throughout the system.

An efficient purge system removes condensate from inside the shaft, enhancing thermal performance and overall yield. The result is a homogeneous final product with low steam consumption, supporting both productivity and sustainability goals.
